There are 10 in hogwarts and the rest are in houses spread out around the map. You can scroll out of the map screen all the way to show "regions" and when you hover over the region it will tell you what activities (including demiguise moons) you need to do in each area.

Usually in locked areas after you get alohamorharolamoha
Also almost in each classrooms
Basically just explore, it's part of the fun, don't use guide.

Just use a YouTube guide

They don't show up with Revelio unless it's nighttime either. If you see one while exploring for other stuff, you should wait until night and collect so you don't forget where it is later.

Oh and it helps to know what they look like with Revelio. It'll have the shape of a Russian doll with a blue glow.

I don't know if posting links to outside locations is allowed here or not, but if you Google: "All Demiguise statue locations in Hogwarts Legacy" click on the "Polygon" site link. It will take you physical step by step to find the statues all over the world map.

Many of them are behind locked doors. There is also 1 in most hamlets.

You can see them in daytime too, but they cannot be collected except at night.

Or they could actually play and experience the game instead of just following a guide. There's a huge difference in asking for some tips on a forum to mindlessly following someone's YouTube video.

Well, you need to collect them in order to level up the spell so I wouldn't say that. There are some in Hogsmeade that don't require locks or are just level 1 but it's best if you start your search within the castle.

There's a bunch in Hogwart's, but there's usually at least one or two in each of the little towns around the map.
