Controller. Accessing the menu, map, the UI in general is slow i find it kind of annoying. For me it accentuates how clunky the UI is. Always hated controller cursors. General moving around and combat is much easier, dodging and rolling, deflecting is all very easy. Flying on the broom is easier as well. Though i don't know why they put ascend/descend on the right stick that also shares the camera control, whilst having just left and right on the left stick. To me that just feels weird.
KB+M. Combat is definitely the hardest. You have to use all 5 fingers at once. Definitely takes some getting used to. The reason it's a lot harder is because of swapping spell sets. Unless they're all absolutely nailed to memory you will hit the wrong keys. Like i'm 30 hrs in and i'm still getting new spells so I've found it hard the whole time. But maybe i just suck. Flying is difficult for me also since ascend is *space* and descend is *ctrl*.
TLDR. As a long time KB+M player, I recommend using controller
