Correct play order?
I've never played Halo before, and I understand that MCC is releasing in the chronological order of the series. i.e. Reach is a prequel and won't spoil anything for the story. However, I am curious if anything in gameplay is significantly different that might make me want to play in the original release order, and wait for 1. I am primarily interested in the campaign over multiplayer, if that makes any difference.

Not really. Reach, 1, 2, 3, ODST is technically halfway through 3, 4

The only major differences would be weapons and abilities.

Reach: armor abilities such as sprint, and jetpack. Can almost be totally ignored. Gunplays the same aside from new guns. Uses hp packs + shield

1- no abilities. Hp packs + shield

2- no abilities or hp packs(i think)

3- more grenade types and equipment like bubble shield. Only shield. Can dual wield small weapons

4- spriny built in. Forget if used hp packs.

Honestly i don't think youll feel a huge difference between the games except maybe 4 and odst. In the campaign they are all still halo at the core. Id just play chronological order.

The main confusing thing will be elite model changes

Halo Reach is a prequel to Halo: Combat Evolved
If you want to play in chronological order, you'll get it should you just wait for the MCC on PC releases of the games.

If you want to play in release order, Lord Doge posted the correct order for that.

However I don't think it truly matters which order you choose, each of the Halo games plays rather differently from each other for a multitude of reasons, even the jump from Halo: CE to 2 is quite big in terms of gameplay differences.

I think the biggest difference between Reach and it's predecessors would be the weird semi-loadout system where you choose a different ability like armor lock or sprint or what have you.

This sums it up nicely

Reach does have some little things in it that change it up slightly compared to Halo CE, but it largely plays the same and playing Reach before CE is perfectly acceptable order imo for new comers

The others already posted the correct order...but...they will also Release the games one by one and it will take some time between those releases so don't worry about the order.
