The game itself doesn't expose any hooks, but there is dfhack that opens up a decent amount for modders and players alike.
Most mods for this game will just be raw files (including "reactions" and such that can have an active effect on other things), some will use dfhack to go further.
Most of the crafting you can do are things exclusive to adventure mode, like making sharp rocks (not huge boulders but rocks found anywhere on the ground) through knapping to have some very cheap but somewhat effective throwing weapons.
If I remember correctly, you can butcher an animal you killed and other basic stuff like that, but that's about it.
Yes, adventure mode is mostly about fighting and little else.
The main strong point is supposed to be that you can visit your own forts in that world.
This is why I am always a bit puzzled on why so many people were so vocal about adventure mode since the release of version 50, which in turn made a decent amount of people think that it is a lot more than it really is.
I am pretty sure that we will see quite a few complains when adventure mode gets released, because the expectations seem to be completely different from what it has to offer (and it never promised anything more than the new UI for this version either).

I love adventure mode, and you can create some interesting stories and lives at times, but outside of the intricate combat and the interesting dialogue weaving, there's a good deal left desired still if you plan on only playing adv mode. Individual mileage may vary, of course.
