Why there is no economic system in Dwarf Fortress?
I have read on internet that economy was "disabled", and whatever we call economy today is just a set of limits for population, etc (in normal and hard modes)
The wiki (https://dwarffortresswiki.org/index.php/Dwarven_economy) states:

"In the current version, there are no conditions under which the economy will activate. Toady One has stated that it may come back in after sweeping changes are made to make it less broken."

The economy stuff was only ever active for a very short amount of time (long before the steam version) but it caused a lot of issues (not bugs, it just made the game worse by working correctly).

It is not likely to be changed any time soon as it doesn't seem to be in the immediate plans.

As previously stated, it caused a lot of jank that wasn't working with the intended flow Toady had going for the game, but it's within his extensive roadmap provided here[bay12games.com].

This one existed well before the Steam variant of the game, and he constantly updates it.
It was VERY complex, to the point of detriment to other systems. If I were to hazard a guess, that might be the next thing that's focused on after MAGIC. Hell, we only now got a fix that no longer makes forts churn out more from roasts than from masterwork, diamond-encrusted gold statues.
I've played since .23, and I think the economy was a ton of fun. A highlight I miss. It was busted as hell, but DF was intensely difficult back then and you just learned to work with it. Every dwarf needed to pay rent, but large well run forts didn't produce enough jobs. You'd have to set up endless pump jobs as massive jobs programs, or else you'd get a tantrum spirals.
