If it can be tamed, you can first tame it a bit and butcher it like normal tamed animals.
You can use the same method you would use for throwing them safely inside a "pit" (usually as targets for your military's training) to send them down into magma as well but you lose the opportunity to get anything from them.
I captured a bronze colossus who killed hundreds of creatures. Now it serves as an executioner for gobbos and lizardmen, sent to him using a "pit" zone.
Once I noticed that in the "items" the colossus has a bismuth-bronze spear attached to its body. In the logs I found out that he started actually using this spear.
Don't tell your dwarves to dump the creature instead, they'll free it and push it. Considering the formerly prisoned creature is free to act at this point, it's a bad idea.
You can also release them in walled section with fortification for a variety of purposes. Web farm for web creature (need a way to force them to attack and "dump" the web in a place it can be collected safely, check the internet for silk farm if interested). Crossbow training. Arena fight. Drop them on a faction they are enemies to when they attack (like dropping a forgotten beast on gobbos). Drop them on elf traders for funsies.
if killing for meat:
land animal: if not tame/trained, animal trainer tame first.
then assign to be butched (butcher knife)
If fish: build cage close to butcher shop. make pit zone next to cage/butcher. assign fish to pit.
if killing enemy:
build cage where its safe for your fortress for enemy to run around. like in room you can flood and drown them. or shoot them with crossbows through fortifications.
build lever outside of room. link lever to cage. lock room. pull lever.
OR build cage near magma. make pit zone in magma. assign enemies to magma pit.
lots of options. you can also remove enemy's armor and weapons while they are in the cage. Easier for your army to kill unarmed goblins.
when done you can unbuild cage and use it for more traps. or make lots of cages and just destroy cage with goblin in it. If you tame animal in cage for meat, there may be seeds in the cage. you will have to dump them to use the cage in a trap.
Try smashing a bronze colossus for some hilarous result ! And some !!FUN!! afterward.
