Pale hunter can also sometimes cast magic, your dwarves can't. They don't need to breath and can go on the ocean floor and be OK, your dwarves can't. They are never exhausted like your dwarves. You can stab their major organs except for the brain and they are still going, while your dwavres would die.
So yes, there are many things a pale hunte rcan do that a dwarf can't.
Like any weapon and gear, it's not race locked but strength/size locked. If a dwarf is tall and strong enough they would be able to carry (and use) a 2handed sword. But a dwarf can't be that tall and strong, according to wiki. Pale hunter apparently can.
yes, of course a pale hunter dwarf is still a dwarf, just undead and with some magic. You've not described a different creature, you've just described any undead.
Has anyone ever had a dwarf as strong as this guys and tried to equip him with a 2-handed weapon to claim it's impossible?

As for pale hunter they are pale hunter not dwarves. Thus the name. Like werecreature are not dwarf anymore when they shapeshift.
As for 2h sword, the issue is from a bug. Pale hunter being another entity creature (agree or not, that's how the game works), they may simply not be affected by the bug.

While the ofrum post is quite old, the newest post on the bug report is from 2022, so not that old. Although it may have been fixed since then, who knows ?

With height and broadness modifiers, some dwarves should be able to use a two-handed sword, and a select few might manage to do so one-handed. Unfortunately, due to a bug, two-handed swords cannot currently be equipped by any dwarves."

The answers is that it could equip it because NPCs don't do checks to equip. It doesn't matter that he was undead or whatever. Goblins can equip pikes for example
And as you said, dwarves CAN equip 2h swords in adv mode. If they cannot in fortress is JUST BECAUSE OF A BUG, not because of game design

If the pale hunter confuse you, then as I said, as far as the game is concerned they are not dwarves. The game probably use some variation to add and remove token to the entity to make it what it is, which may make the bug irrelevant.
Just like a necromancer is not a dwarf. Or a vampire. They use different values and token and the game is just a game, it doesn't know what the hell is a dwarf, it just read code.
