I would assume if economy came in, the value of coins would be directly tied to the value of their metal in a given situation.
They used to be useful for danger rooms in dodge and block training, but in so far as I am aware that no longer works.
It's still a good general task to give to pissed off dorfs too to fulfill craft something that I don't care about.
Other objects
leggings are the best option for everything else.
Keep in mind this is a cheat. Personally I don't care much about duping copper. I just set up constant orders to forge full suits of copper armour then smelt anything that isnt masterwork.
Given that I have never run out of copper doing this I have to assume this approach has a positive return. I keep going until I have enough copper armour to outfit everyone and this is just a way of training my smiths.
Same works with iron. but I explicitly avoid dupping steel because that is just making end game too easy.

They have no other value then like... Their weight in the metal.
I make sure to mint a set of coins once a year. I treat it like a roleplay thing. I see what my master metalcrafter puts on the coins faces every year.
