What can a guildhall do ?
It takes 10 members to register an established guildhall.
What else can this guild hall do in the fortress ?

It's a location where idle dwarves will hang out, socialize and organise skill training sessions / demonstrations.

If you have 10 dwarves of that profession, the guild will be established. Then you can choose if only guild members have acces or everyone. If the guild is not yet established, all dwarves have acces automatically.

Usually a "Farmer's Guild" is the first you will have established. You can set up a "Metalsmith Guildhall" quite early on. Any dwarf with a suitable skill may organize a demonstration of said skill. Everyone watching him will receive some skill gain.

I usually split my workforce in farmers and metalworkers and try to get those two guilds as fast as possible.

A "Doctor's Guidhall" is quite valuable too, as is provides some easy training for your medical staff.

Totally worth the investment. They can attract visitors as well. I have mine set to citizens only because I don't want outsiders. The hardest part is deciding how much furniture to decorate. I'd recommend putting them reasonably close between the labor they represent and your tavern.

You don't need a guild established to make a guildhall, but you do need one to use the members-only option to restrict who uses it. You can set up a metalsmith guild hall even if you have only 1 dwarf using that and then use this to train all idle dwarves in such skills. This is useful to influence what gets made with moods so you can try to make a platinum whip (forbid bars you dont want them to use) instead of a bone ring.

If you put a toy stockpile inside a guildhall, then children are more likely to hang out in there and pick up useful skills while they play. If, for example, you've got a wealth (and marginally less likely to make artifact bone nest boxes with menacing spikes of schist).

You can make guilds for halls even before they are requested or with little to no members. It's a great idea to put down guilds for medicine skills and the like, so you naturally always train these skills in your society and don't have to wait for a "lucky immigrant" to come and give you what you need.

It seems there are guilds with or without facilities?
- guilds with facility designation.
- guilds with mention of a meetingplace ( meetingplace,?*<next at 2000*> ..what would this mean?
