Like everything in the game, it's a question of how much chaos/danger vs potential benefits you want. The tavern helps dwarves socialize, relax and get happy thoughts, it also attracts mercenaries to your fort, who can petition to stay and fight in your military.
On the other hand, it's a source of brawls and injuries, as well as unhappy thoughts from getting overly drunk.
I have yet to have a brawl in my tavern. But it's a rather big one, that may help. And no tantruming dwarf either.
DO NOT ASSIGN A TAVERN KEEPER.
Ever.
For me, everything was going great, some dwarf threw a small punch, and 20 dwarfs died.
It took months to clean the tooths everywhere, because some were below the statues.
Stupid.
Without a tavern keeper you'll have 0 problem, they'll just drink a bit when they are thirsty as usual.
I don't know if a performer changes something though, I thought no.
Should I add "but depends the kind of FUN you're searching for"?
No since you're asking I'll assume you're a sane dwarf and consider it was a bad thing xD
^-- This.
