Report a translation problem
Cutting stone blocks should be linked to the stone smoothing, not the stone engraving job. So that is very weird. Are you sure you aren't going off the old version of DF when they were the same job? Or did you make sure that the "only the selected do this" button is clicked?
Are you sure you aren't confusing the smooth and engrave orders? I set a single dwarf for engraving and everyone to smooth (since it seems not to have a quality) and you have to smooth rock before you engrave.
Also make sure of the priority you have set for engraving order (when you click what you want engraved). Since my engraver usualy starts out as a miner i use priority 1 and 2 for engravings and he'll skip the mining orders i have around, which i usualy put at priority 3 & 4.

In the work detail I see Stone working has:
MAsonry
Stone Carving
Stone Cutting
Stone Engraving
Stone cutting= smoothing and making blocks (think it's also cut tracks, fortifications, and some other stuff)
Stone carving= furniture, etc. (think of this as everything in the workshop except blocks)
Stone engraving= only engraving
Oh, and yes, this is a change to the .50 version of DF (both classic and premium)
