If you also want to get wool and such, you'll need grazing animals. Same if you want a wider variety of meat types for your dwarves.
I would recommend starting with some pigs and chickens, turkeys, or ducks if you want to easily have those industries setup from early on.
They don't need to graze so you can house them under ground and they will give you meat, milk and eggs.
Sadly there is no convenient answer to the wool situation. At least none I know of.
