Tips:
Create the wood burner. Below it, create a stockpile for ONLY ash bars.
Create the ashery close. Create a stockpile beside it for Lye. Make sure you have barrels.
Create the soap maker. Stockpile to include all sorts of Tallow next to it, nothing else (its in the food category). Make sure to not have tallow allowed in any other stockpile.
Set standing orders to create Lye and Soap. Ash can be made in bulk but shouldnt be automated since it will eat all your trees.
Put all of these things right next to your kitchen. This will be enough to make some soap, however if you want to make sure you maximize your soap output, you will also need to go into the Labor > Kitchen tab after slaughtering animals and make sure to mark Tallow as forbidden for cooking. Tallow wont show up unless you have it available, so you will have to set it just after the butcher renders the fat of the animal, for each sort of animal.
It is not the easiest thing to do, but with this setup you will be able to make soap.
You can also use a quern/millstone to mill seeds (Quarry bush is the only underground one you can use), then have a screwpress make it into Oil and use that instead of Tallow. Quern should have a stockpile of rock nuts (comes from quarry bush) close and the screw press wants a stockpile of seed paste nearby. It will also need some jugs to hold the liquid. Its too much hassle for me so I just get by with the occasional soap whenever i butcher animals.
I think the appeal of the game stems not insignificantly from the bragging value :"i play dwarf fortress"
