Q: Fire monsters and weapon issues
I've had 2 forgotten beasts recently that shoot fire, they were very hard to deal with.
When we engage them, fire gets shot off in all directions and there is smoke everywhere. Dwarf militia seem to get blinded and are unable to attack them, it's very uncertain trying to kill these beasts.
Any tips on fighting fire creatures?

Second question:
I'm having issues with weapons for my military dwarves. When I move dwarves around squads or at random other times, weapons seem to get locked and then are unable to be picked up when needed, what causes them to get locked?
Also other dwarves seem to steal weapons, especially "named" items I think.
Not sure how to deal with this.

Make sure you didn't turn off temperature in the settings. It prevents temperature from changing, so when something places fire or magma in a tile, it becomes permanently hot. Dwarves cannot path through it.

Weapons are assigned to a squad position, not to dwarves. If you remove the dwarf from that position without removing the items assigned to it, the items remain assigned to it.

Adding onto this I'd recommend you have some sort of ranged soldiers available, I had a monster recently that I couldn't fight at all because it was so hot that melee was quite literally impossible as dwarves refused to engage/couldn't attack when engaged

No sure if it was fixed but these types are not imunue to fire themself so if you lure them to a burnable place they die from own fire^^

if you have time and resources you could also build a trapped area for it to path through maybe you get lucky and trap it in a cage then you'll have a really mean guard dog.
closing the gap on a fire breather can be hard, you could build a small room with a small hole in the wall station all your militia in this room when the beast comes maybe you get the drop on it :/

I actually have a fire shooting demon in a corridor at the moment I'm thinking of getting it into a smaller room along that route and using it to shoot fire at cavern dwellers..
