Having too many trees isn't exactly an issue, it means you won't have problems making beds or ash (the only things that require wood and can't be done through other means).
Fruits can be brewed, eaten or cooked, so that also means little concerns for food, drinks or exports (prepared meals are often great sources of income when trading).
Kaolinite is a sort of clay that doesn't require glazing, you make porcelain out of it.
Your kiln will need some fuel to work if it isn't a magma kiln with magma heating it.
Thankfully you have tons of wood so fuel shouldn't be an issue for a while if you make some charcoal from it.
A single charcoal can also help you turn bituminous coal or lignite into coke for a decent amount of fuel per "ore".
I built a regular kiln, it has options for dig clay and work with clay but I can't specify the kaolinite anywhere.
Theres also like 10 more layers above the mountain with endless trees, I'm thinking to keep those for fruit and chop the main layer ones as needed.
If you only have kaolinite, it doesn't matter if you don't specify the type but you can specify it after setting the job (work order or through the workshop) but before the job is accepted by a dwarf, with the magnifying glass.
