The reason why they ran out is because you caught them but that's it, so they are still wild animals and you will need to use an animal trainer to tame them.

They are grazers, so they will need a decently large pasture with grass or moss to be kept alive and fed.
You can also just opt to kill and butcher them if you don't want to tame them.
Being large animals, they give quite a bit of meat and bones (plus one skin for leather), and they have a value multiplier of 3 for these products, meaning that meals, leather and bone crafts.
They take 5 years to grow into adults so they are not animals you can butcher that frequently but the value multiplier and large amount of products per creature makes it a decent source anyway.
