To make a wall 3 z-levels high, I've been making a wall 3-squares wide. Start with the wall closest to the edge of the cavern map, but not right up against. I leave 1 square as a 'buffer' to get enemies stuck in. Build that first wall, then build another wall 'behind' it, and then a 3rd wall once that is finished.
Next, build a ramp in front of the closest wall to the interior. This will allow your dwarves to access the top of the walls you build. Go 1 z-level up, and build another line of wall closest to the edge, followed by a second one 'behind' it. Then build another ramp and repeat with the next z-level until there are no open spaces accessible from the edge of the cavern.
Hopefully this will protect your dwarves from the scary enemies.
