When you create the job IE Copper Breastplate, click the Magnifying glass icon, this will give you more options.
For anyone playing on classic mode, this didn't used to be a thing and the items' size was determined by the person(s) making said stuff. So you needed a human craftsman to make human stuff, and etc. This is cool if it's a new function.
According to the wiki it was possible:
"As of version 0.42.01, your dwarves can create clothing and armor in any size to accommodate the needs of non-dwarven fortress residents. To do so, request the clothing or armor to be made from their respective workshops as usual, then in main workshop menu look at the details of the job. filter for the race you want to make clothing for and press enter twice. Alternatively, clothing made by a creature will be sized for that creature. Sizing clothing for cougar or hyena men allows it to be worn by both humans and the dwarf-sized races."

Of course, those button presses will likely not work in the Premium version, but there is a good chance the similar mechanics are there.
Will my human monster slayers use the stuff I craft for them? Or will they stick to their own equipment
If they aren't citizens, I'd doubt they'd use your stuff. If they were citizens... no idea, but maybe?
