Is Sun berry / sunshine brew better?
I know it's more valuable. But other than the variety bonus, and the value, does it do anything else for my dwarves? I ask because I go well out of my way to set up a sunshine still when they're on an embark.

I'm goin with this.
Higher value means that happy thoughts arising from it are stronger. And that it sells for more, if you're into replacing barrels en masse.

If you’re living in a Good biome, which is quite rare, then it seems to me that you might as well go for it. The only downside is that they must be grown on the surface, but building a little tower on the surface is easy enough. Just make sure that you build an outward–facing overhang to prevent anyone from climbing in and you’ll be fine.

Ok but is it that noticeable? They have a variety of good drink. Idk, they seem to be really happy.

Dorfs will be happy to drink a variety of booze. If they always have the same stuff they get negative mood messages about drinking "the same ole booze". So yeah brew it when you can.

Or, you can build your farm underground, but then channel out the roof from above and then install flooring (ANY KIND will do) over the resulting hole. You will now be able to grow any kind of surface crop in that farm field! Although you can also use clear glass block flooring (which, let's face it, would be MUCH more realistic), clear glass block production is a VERY involved process. To even start making these, you need not only sand, but also pearlash. To make pearlash, you need the following processes:

Wood Furnace: Turn logs into ash
Ashery: Turn ash into potash
Clay Kiln: Turn potash into pearlash

Or you can just build a wall and ceiling over existing surface terrain instead of channeling, works just as fine.
