Best way to get raiding by goblins often is embark near goblins, maybe 1 day away from them. Then you're sure to have some fun with sieges.
As for your dehydration deaths, do you have access to water? When dwarves are injured, they can only drink water until they recover. They could be getting injured in combat and then dying while recovering due to no water to drink.
Edit: They won't drink saltwater, so make sure you have freshwater from either a river or from digging into an aquifer.
Check the thoughts and personalities of the unhappy ones. They might just be very prone to stress, or maybe they've lost a loved one, or any number of things. Generally yeah, it's true that for some reason or another at least a couple of dwarfs will be unhappy.
Yep. Most dwarves are perfectly content with work to do, and booze to drink. But there's always a chance that a dwarf can roll a certain combination of traits that make it impossible for them to ever be happy. Sometimes they worship too many gods and can't pray to them all. Sometimes they just keep reminding themselves about getting rained on 3 years ago until they go insane.
