Making bedrooms
Is there a faster way to "paint" bedrooms? So I dig out like thirty little rooms for my dwarves, and when I begin zoning them for bedrooms, it SEEMS the way to make this work is to drag over a small room, hit accept, click bedroom, drag over the next small room, click accept, etc., etc.

I tried just highlighting without hitting "accept" (which is MUCH faster) but that seems to register it as only a single bedroom, right? Is that what I should do, or am I missing something else?

Use the "Multi" option before you draw your bedrooms. Make sure they each have a bed and are enclosed (usually with a door).

click the "multi" button THEN paint all your bedrooms

Note, to use the multi, as long as the doors/beds are scheduled to be placed, you do not even need to wait for the dwarves to place them. As soon as you get done designating that you can go ahead and use the bedroom zone command with multi selected.
