Tips for managing butcher shop? rotting corpses...
Does anyone know a nifty way to stop the butcher's shop "ingredients" stockpile turning into a bunch of rotting corpses?

Is there a setting or a trick to "haul away only rotten corpses, not fresh ones"?

Also - I guess they just won't butcher everything, right? They're not going to butcher a goblin, correct? Only "food animals"? Same goes for the Tanner? It's a pity if that's the case. It's would be pretty cool to butcher goblins, sell their meat to the elves and makes leather out of their skins (not a psycho, really - would just be cool if the game allowed "anything").

you need better refuse logistics. Either make everyone do refuse , or dedicate a bunch of migrants to only haul refuse (with custom labor). Make sure the path from your butcher to your refuse pile is as short as possible.
If your refuse is outside, labor->standing orders->refuse & dumping->workers gather outdoor refuse

In the current version of the game, it isn't possible to butcher sapient creatures due to dwarven ethics forbidding it.

Butchering of intelligent creatures is controlled by the ethics of the race you are playing. The race ethics are slightly randomized during world generation, but I believe that without modifying the game files only the Elves will ever actually eat intelligent creatures.

The raws make it fairly clear that they only eat intelligent creatures they have actually killed in battle (even if they are other elves and this would otherwise be prohibited.

Elves, as most other species in the game, view butchering sapients under any other conditions as unthinkable.

"Unthinkable" is an ethical view of a civilization that often results in war between civilizations that disagree on that issue, which occurs during worldgen.

Thanks for that info guys.

Is there a way to distinguish between "usable corpses for butchering" and "rotting corpses"?

There's an option under food for "unprepared fish", but I can't see an equivalent for meat - only the "corpse" option under "refuse".
