How to butcher caged animal?
I have 3 delicious elk birds in my stockpile siting in cages. How do I butcher them? Do i need to tame them first?

select them in the animal menu and designate for slaughter, if that option doesn't exist then you might need to indeed tame them.

I don't see in pet/livestock tab. I guess i will just release them and tell my soldiers to kill them. Also should I change my cage traps to something else, wont dwarfs get them self accidentally killed?
I really wish i could just click on them, and choose to slaughter them. Instead of having to go into the creature menu and find which one i'm trying to slaughter

Go to the "other" tab in the citizens/animals area, they are not classed as pets unless caged+tamed, you have to select them for training in the "others" tab first. Once they are semi-wild (usually happens instantly), you can then find them in the usual pet/livestock tab and can select them for butchering.

You can do it this way in the free version of the game, so hopefully that will be coming to premium at some point.
The "Pets/Livestock" and "Others" lists are sorted by appearance. Animals spawned (and usually captured) last are at the bottom of the list.

You need to tame the elk birds in order to move them from "Others" to "Pets/Livestock", where you can mark them for butcher.
If you release your delicious elkbirds above ground and have hunters about... then meat. Do hunters go into the caverns?
if your elk birds are part of a wave of cavern invaders and marked as such (caged priosonners) no matter what you do they'll stay in the other tab and you won't be able to butcher them. Otherwise if they're wild animals you need to tame them, once done they'll be in your pets/livestock tab and you can hit butcher like with any other animal.
there are 2 ways that work for me

1. after you train your elk birds they appear on the pets/livestock menu where you can set them to be slaughtered

2. release them in a room, have the military kill them, set a stockpile for corpses next to a butcher shop, (go to refuse and select the corpse option instead of there, when i tried setting it to a regular corpse stockpile it didnt work for me. just in case i have both selected) and then it should automatically have someone come to butcher the corpse assuming you have "automatically butcher carcasses" set in standing order

You don't necessarily need a stockpile for that. If the corpse is within the search radius of the workshop, it will create a butcher task itself.

The stockpile is only needed if you have corpses far away from the workshop, so the dwarves will haul it closer or to a safer location.
