Pet Dog Q:
is there a negative impact to my fortress by having too many dogs roaming around as trained pets?

Yes. When something inevitable rips their heads from their bodies, dwarfs will freak out.

Also you can't butcher pets. Nom nom it's dog biscuit time

Dogs? Not really. You have to open dogs up into being pets. If a stray dog, even trained, dies no one gives a ♥♥♥♥. Unless the trainer gets attached to an animal. But only the trainer gets effected by the bad thoughts. They are good source of food, meat, and tallow for soap. Or bait for traps.

Cats are the ones that are dangerous. You do not get to control if cats can be adopted or not. They adopt their owners. Having a fortress overrun by them increases the odds of dwarves getting attached to one, and then them dying. Fortunately... cats do a pretty damn good job at not dying.
