There a way to make walls into merlons or something so you can have your dwarves walk along walls or roof tops and shoot? I know there's a way to cut holes into walls so they can shoot from inside of a building, but I'm talking about on top of a building/wall?

Sure, just build walls. If you leave opening they can shoot from them but will have little protection. They can try to dodge back behind the merlon wall but it's far more risky then carving fortification/arrow slits into a solid wall.

Fortifications let you shoot through walls, and prevent people climbing through or falling over them.

But if you want them to shoot from up a level just station them on the top of the walls or make a staircase to get up there.

Are fortifications and the little slits you can cut into walls different? I just want to make like... a little castle kinda deal to guard the gate to the surface but I still suck at this game, lol.

Just build a ramp on the side of the wall and the dwarves can go up and walk on top of the wall.

You can smooth a wall making its value higher
You can engrave a wall with an image making its value higher
You can carve track for minecarts
You can put fortifications into a wall

You can also build a wall, or a fortification and do the above mentioned things. So I think the slits you are talking about are fortifications: yes.

If you plan to shoot through them, you should have fortifications.
Personally I don't bother with archers cuz it's a pain to get archers their ammunition lol.

Yes, fortifications are the little carving slits. For some reason, the name of them is missing on the tooltip lol.

You can have dwarves shoot down from wall if you have fortifications at last floor. Also you may want to add extra roof layer above it, outside of your walls to keep dwarves and enemies trying to climb walls.
