^--- I do the same. It's really the easiest way, though it will prevent other birds from laying in other nests if it's a "coop." (Maybe individual rooms and nests would be ideal?)
I build two rooms, one for breeding and one for egg collection, with one nest box for each hen.
Thee or four hens will give more than enough eggs to feed your fort. The breeding is just for leather and meat.

oof... i made a row of 10 boxes, the birds lay eggs all year round so it wasnt a problem for me. Well, now i have to deal with miasma because there is too much meat... but yeah
