Play it how you want and fiddle with the settings till you're satisfied. People are spreading misinformation.
If you can play Rimworld, you can play Dwarf Fortress. Simple as.
Also that's subjective lol.
Just concentrate on doing one thing a bit better each game - a good place to start is 'My dorfs might die, but they won't die thirsty. This fortress *will* have enough booze !'.
Then, once you have the hang of running a booze industry, work on learning how to do the next thing.
Remember, losing is fun !

For OP: there are multiple settings that can be set during world generation to create a very mild world. Then for embark pick a "Serene (good/benign)" surrounding for a more city-builder style of gameplay.
