Otherwise, go into your tavern location settings (click on it, then click on magnifying glass icon on the top left) and set it to accept only your citizens, by default it's set to "all visitors welcome".
You can also tweak visitors cap in game settings, defaulted to 100.
There is no wrong answer as to how to deal with unwanted guests
As for the already accepted bards, you can click on then an expel the from your fortress.

You should be able to designate them to be attacked like any other creeature.
Don't know, but I'd imagine the civilization those bards come from won't take kindly to them dying at your place.
What might also happend is your attack dwarfs turning on eachother. Loyalty cascade will happen that is pretty much like a civil war in your fort.
Expand your drink and food industry together with the farming one. An above ground tavern might be your first line of defence against invaders. It would still reflect poorly on your fort if they died killed by goblin siege, but at least you don't risk your own dwarfs getting hurt.
I once had human bard join my fort. I did not build any rooms for guests to rest yet and my tavern keeper kept giving the poor bard more alcohol to drink. Bard died.
Won't all the dead bard return as ghost sooner or later to seek revenge if you kill them?
