i DONT want to have the items always in stock, i want to build a few at once and then place them afterwards, so i dont clutter my stock.
This was actually a very common mod used in DF by many people, but I do not see a way to plan items that you don't currently have built waiting in a stockpile. A mod called DFHack allowed for this kind of planning, and the workshop may already have it. It's worth looking for this, but the function you're asking for doesn't exist in DF as it is.

I may have misunderstood you, yes. If you want to build something right now you can either queue up 5 chairs in a workshop, or you can use the manager to simply build 5 chairs. It will not repeat by default.
Other people are suggesting ways to keep a certain amount in stock, which is what most people want. That can be done as well.
