Build room (door, bed), and select the room pain tool, select "Multi paint", drag over aaaaaaaaaaaaaaaaaaaaaaaaaaall them rooms then hit done. Congrats you now have a squajillion bedrooms. Just leave 'em. The dwarves auto-claim for their family the first time they sleep there, and all share a bed.
The only time you would need to assign a bedroom is if you're making a royal suite of rooms for one of your nobles. Otherwise, just create it as a bedroom and let the dwarves sort it out themselves, families will group together on their own.
But you're kinda right, usually you don't need to worry about assignments. And you can micro-manage your important citizens later on.
And do you assign just the bed or the whole room?
