The dwarf wiki is outdated now, since this is the first day of the new version.
will that keep my dwarves from using it?
It's a new version, so I'm not 100% but I would hope it would work like the old version, where locking (or whatever the old mechanic was) keeps animals from crossing, which isn't the same as "forbidding" it (dwarves don't touch it).
Yes, barring the door will keep your dwarfs from using it.
I do suggest with the case of the caverns that you instead set up a gate- it won't keep out things that can break down a gate [Read: Bridge, you set up a bridge.] Rather then a set of doors, I also suggest that you basically wall off your section of the cavern and expand out that way.
