The goal is to just not have everyone die really.
Give yourself some challenges;
Don't close your fortress to the outside world.
Dig deep, open yourself to the caverns.
Etc

Drowning your fortress in water is a good start, getting overrun by Were-Keas and Giant Zombie Hamsters is a nice mid-goal, while drowning your fortress in Lava because you tried to cleanse the fat of your overweight dwarves while fighting off the circus (if you don't know what it is do not look it up , massive Spoiler ) is viewed as most favorable death.
Be creative!
