The normal way to deal with excess stone is to make something out of it that does compact (mugs, furniture, stone blocks if you still want to build with it).
Make coke and bars out of your economic stone, turn it into armor and weapons
Die a terrible death due to increasing the wealth of your fort to previously unknown mathematical values
I really loved quantum stockpiles in classic because of how much time it takes to haul rocks but unfortunately I think it's gone in this release
Also, stone crafts sell for really good money, first two caravans I trade with usually get a sheetload of various rock figurines and I can buy out their stock
Otherwise, some people used the dump function too.
Like, if you have a big area you want to clear of stone, you just mark them all for dumping, then they'll be stack in one tile.
Then you unforbid them from the dump zone.
Otherwise yes, try to convert them in stone blocks, crafts, furniture, mugs, pots (very good substitute to wooden barrels), ...(?)
Try to create most things from rocks because you'll be swimming in them otherwise, sadly, otherwise just smash them with a bridge, if you're overwhelmed by low quality ones.
My solution in the classic version was quantum stockpiles, and I hoped to use it again since I don't like to have to create a ton of rock things to somehow reduce the stones everywhere.

Or make them into rock crafts, which also go into bins and trading.
Blocks can be used for building but not for making crafts, sadly.
