Edit: To add I believe there's a game key that lets adjust the speed during play, but I don't think I've every used it.
In one of the kitfox streams they tried focusing the camera on a dwarf and following it. They only had pause and unpause, zip – where did it go. Would be nice to have finer control on speed to follow what is going on when there is combat going on for example. I once played DF on an atom processor and I sure didn’t need to slow it down then. But some people have really fast rigs these days. Although game may slow down itself over time, I don’t think that is really an answer to the question, why there cant be more speed control without having to mess around in the game settings.
