Did that once by using a river on the surface (warm climate because F freezing water) by digging a 3 wide tunnel that starts with a row of fortifications and a V shape pressure lower and ended in a channel that has floorgrates to filter any creature that made the mistake on ending there somehow. The water fell like 10 z-levels though some "shower sections" which were made at most visted places (meeting hall & crafting area) which were under eachother before landing in a tunnel that ends outside the map.
You cant dig out the last blocks at the edge of the map, but you can smooth & fortificate those to make the water leave the map anyway.
