The only other cost for the spiral staircase is a single weed stem. You can basically get 20 stories up with only one hauling trip (more if you have the Pupa hat).

Maybe there is better, but is my go to template for now. Just note entire structure will rely on a single wall piece unless you add ascetic walls to the build. But I've never had a tower attacked.
You can carry all the materials in your inventory so you can use them anywhere on the map no matter what materials are around.
And there are several spots where you can farm clay by the stack in a handful of minutes, so getting the materials is easy.
The only downside is that they're horrendously ugly.

This is what I originally came up with, which prompted me to ask the question. I doubt it's going to get many design awards. Started with ladders (constantly relocating a single trampoline to move grass planks and weed stems up the structure), but eventually switched to a trampoline per platform, which makes getting to the top a lot faster.
