Is there any form of sour defence in the game?

asking as whenever an infused bug has the sour effect it essentially one shots us when it hits us or close to it, with it being much worse in caves when it bounces back

Not really unfortunately. Try to roll a trinket with defense+ as it's 50% damage reduction toward everything.

Also if you are in doubt, you can block/parry the pulse.

Max health molars, heavy armor, damage resist+ trinket, maybe a black ox burger... There's no blocking it sadly as far as I'm aware.

Managed to get a damage resist trinket with trickle regen and +max hp, as well as an infused weapon with damage resist that stacks with the trinket so i only take 1/4 damage now which seems to work well enough to let me face tank enemies

Unfortunately trickle regen is worthless :( even now im up at like +1400% on healing from the teeth it doesnt really do much

Still better than something like Wizard's defense when you never touch the staves.

I have desperately asked the devs to allow Block Cancelling on Staves a few times- so they're actually useable like all the other weapons.
I really hope they do that...
