how to change game options
nearly everything I try to change won't change and it says "some options cannot be changed in-game" WTF do you have them if I can't change them??

In-game means after loading a save file. Unless you are getting that message when trying to change things in the main menu BEFORE you load a save file. That would be a bug.

how can I change them before loading a save? I tried starting a new game and they are not available to change until you load into the game

Wait, are you talking about Game SETTINGS? Not the options? As in the custom game settings? You have to swap the game to a custom game to change any of those. Just an FYI, I don't think achievements are available when the game is custom.

Hunger / thirst / spoiled meat / etc - just about everything on the game settings screen I want to change for first playthrough to get my head around this. I need a more relaxed game and be able to go at my own pace.

Yeah, that's the custom game settings. Scroll to the top of that screen and there should be a button that says "Swap To Custom Game" You need to press that. Like I mentioned in my last message, doing so will prevent you from getting any achievements if that's something that matters to you.

Edit: It should be RIGHT above Difficulty so it's JUST off screen in that screenshot.

It's not actually a button, it's just text that says "Swap to Custom Game" (or something close to that), and it's highlighted in red. You can actually see the bottom of the highlighting in his screenshot.

Clicking it switches your game to custom though, so I guess in that respect it IS a button. :)

Yeah, that's pretty much all that's needed for something to be considered a button in a digital sense. A section separated from it's surroundings in some way, like being "raised" or a different color or something, that when you click on it, it does something. The escape screen has a bunch of buttons on the left. No idea if it's considered a button in the literal sense but the term has been used as such for the nearly 30 years I've been gaming on/using a computer. Now you have me wondering if there actually is a term specifically for stuff like this.

Hahah, yah, I just wanted to make sure the OP wasn't looking for something that "looked" like a button, cause it doesn't. Probably why he didn't notice it as something to click before posting this question here.

Thanks - I ended up starting a new game as that was the only way I could see it, but now I see that I could have scrolled UP.

Oh, gotcha. Yeah, I'm used to buttons not having a set look so I assume when something has text on it and is separated from the UI immediately around it, that it's a button but I've also been gaming for nearly my entire life.

I actually was curious if there was a unique term but it turns out it is just called a button.
"a usually box-shaped computer icon that initiates a specific software function"
So nothing fancy or unique like a bar/pipe, |, which is also "or" in programming or interrobang, ‽.
