At 140 hours I have ~
1 hero not unlocked, about 20 levels to go for full knowledge, all but the new paragon tower unlocked. No p2w. I also have not unlocked level editor, because I don't care to.

It'll take a while, but it's not a nightmare, necessarily.
You need a total of 180,000,000 XP to reach max level (155), and a full run through Impoppable/CHIMPS for the full XP per round up to 100 gives 231,150 XP by default. Completing it on an expert map gives an extra 30% (231,150 * 1.3 = 300,495). Dividing the two, this gives a total of a hair under 600 wins on Impoppable/CHIMPS on Expert maps.
For a ballpark time estimate: 20 minutes a run * 600 runs = 12,000 minutes, or ~200 hours of playing nothing but Impoppable/CHIMPS. This will also earn you 600 random insta-monkeys from tiers 3 to 4 for completing round 100 each time; 144,000 monkey money for winning, not including the 1,200 first completion payout or the extra 10% money gain monkey knowledge; and the ~300k tower xp per run will be divided among all the towers you used.
Best way to grind this? Spamming Dark Castle on Impoppable is probably your best bet. The short lanes to the exit makes waves finish relatively quickly, and compared to the other "easy" Expert map Infernal, there's a lot more space to place stuff like banana farms to get expensive carry towers quickly. Also, being able to leverage whatever monkey knowledge you have is very handy. If you have it, double cash mode will also help in making this an unchallenging faceroll.
