What does each lvl of paragon do?
Ive been looking everywhere for an answer but i cant find a single one. What does each lvl of paragon (1-100) do? Do they add flat dmg to the towers or add more projectiles? Does lvl P50 and P51 have a huge difference in dmg or not? Can someone please answer?

"Paragons can become stronger by having a higher Degree. Having a higher Degree increases many of its base statistics, particularly pierce, attack speed, damage, and ability cooldowns (if applicable)."

Most of those stats don't really make much impact vs trash bloons because they already 1-hit them and have enough pierce that more is not needed. The real impact is vs moab class, bosses, and super ceramics. Degree 50 isn't going to be noticeably better than Degree 51. Degree 30 is kind of a "this is fine" spot to aim for.
Generally speaking, degrees very slightly increase attack speed (or cooldown), pierce, and damage, for all attacks and active abilities. Passive abilities like bucc's 6 grapples (the best attack in the game by a landslide) do not get buffed.
If you want the specifics, i strongly recommend googling "btd6 wiki." No one knows those numbers offhand.

Basically what was just said. Unless you're going super-lategame, it's really best to aim for higher-degree paragons during bosses. Every 20 degrees, they gain a spike in extra dmage against them

pretty sure all paragons get a slight power spike from the normal curve every 10 levels

No, the spike is only against bosses. There are no spikes against normal bloons

Obviously you haven't looked into the formula for damage.

Also for regular damage the spike is per 10 level at D1, 11, 21, 31... (10n +1)

Whereas for bosses its at multiples of 20 at D20, 40, 60, 80, 100 (20n)
