As for when: You want them as early as possible (without making yourself lose, obviously). Typically a 3-0-1 Ninja with some support to pop lead, or a 0-2-2 Buccaneer with a little extra support are enough to hold while you get a farm up and running. The non-farm money makers are a bit safer, but generate less overall
If you really want to use them then whenever you can get them without losing but I really haven't seen a need to use them outside of boss events. The earlier you get them though the better so if you want to use farms and stuff get them as early as possible without losing
If you use the hero Ben to generate money and have the free dart monkey knowledge you can get away with placing the dart monkey and placing Ben down as long as you have lives. If you like using Sauda from my experience you can use her to solo to round 30 especially on easier maps to start generating income
On water maps the merchant men ships do good and is my preferred source of money generation when allowed.
Bloon trap from the engineer is nice and easy to get when playing alone if you have a nice straight line/ slight curve setting the engineer to last will make the engineer carry you for a little while should be long enough to rush straight to bloon trap before leads start showing up. Make sure to get larger service area as well for the range and being able to choose where the trap goes.
Sniper supply drop works well on longer maps and even just spamming them can work til probably round 60 (not entirely sure but they get decently far)
Not sure if you if you are having trouble against certain rounds/ difficulties but depending on what you're building having more money won't guarantee a win if you can't deal with certain bloon types.
Boss fights is where farming becoming critical.

Alchemist can also make some good money if you upgrade his lead to gold before lead bloons show up, and then get rubber to gold after that, but I feel the engineer monkey is just better because it pops entire lines of bloons and is usually a safer investment
Merchantmen are helpful, they can pop spam bloons pretty easily with 0 / 2 / x so like the engie monkey they are pretty worth since they will mass clear bloons while also making money, grape shot is pricey tho and they can be hard to place due to needing water so I still think making an engie or banana farm first is better.
