The most frustrating thing
Being unable to simply tell a disciple "Go here and do this thing right now".

Need winter clothes made? Too bad. Their only job is tailor and it's their priority, with a bunch of cotton on the ground already harvested and all they need to do is make cloth and turn it into clothes? They're not interested. Want a thing picked up and moved? Tough, not happening unless they randomly decide to move it. Whatever it may be, you need something specific done or interacted with? It happens when they're good and ready, and not a moment before, because you can't tell them DO THE THING NOW.

SO frustrated with this game. Jobs that I want done, eh...when they're ready. Things I want moved? Maybe, eventually, when it suits them. Interact with X? Meh. Eventually, if you cancel everything else they could possibly do, and they wander around for a while, they might get to it at some point.

JUST DO THE THING ALREADY.

Had to vent. Sorry. But seriously frustrating.

So many people leaving their sects in absolute squalor and not giving two ♥♥♥♥♥ about their people's moods, JFC. You can immediately tell when they try and treat them like slaves because they get upset that they don't obey because they're too busy dealing with their ♥♥♥♥♥♥ situation causing bad mood that was never addressed.

That is the whole point of the game though. Directly controlling everything is an element of so many other games, I'm sure a lot of them will be on sale over christmas. Maybe you would be happier with them? I wouldn't play a game where a core gameplay element frustrates me so much.

You're right, my best tailor is in a bad mood. Wanna know why? HE'S COLD BECAUSE IT'S WINTER AND HE HAS NO WARM CLOTHING. That's it.

It's not a mood issue. Way to assume though. I mean, other than him being cold now because he won't make clothing.

All you said was for me to quit playing. Do you feel better? That obviously wasn't meant to be helpful or worthwhile in any way, just snarky.

What I do when this happens is turn the priority of the sewing table to high and clear all the tailor's tasks (in the 'work' tab) of everything except Tailor. It usually gets done then.

Yeah, I mean it can be annoying that you don't have the degree of control you do in rimworld or the option to force prioritize. Crafting is kinda weird with the sequence of priorities so if you want them to sew, untick crafting and smithing and prioritize tailoring so there's no competition.

I also find it helps to have some people set to ONLY crafting. Part of your problem might be that making cloth is under Crafting, not Tailoring. I have no idea why that's the case it just is.

You can replace some of the walls of your buildings with igneocopper in winter to help heat them, though you'll potentially have them scorching in summer.

I do agree that the way it gets distributed is wonky, like the aforementioned weaving being a crafting task not a tailoring task, while smelting is a smithing task, which weirdly has higher priority than actual forging.

Generally, whenever a task gets hung up it means that there aren't enough materials. In the top right of the screen next to the spirit stone and influence tallies there is a list of materials deficiencies, which can help diagnose the issue.

Simple solutions:

Peon on everybody - never worry about people not hauling stuff.

Have a tailor and a crafter - Tailor only does tailoring (then he makes clothes instantly when you need them and has nothing else to do)

Crafter is too slow making million bricks when you need him to make a weapon?
Give him 3 Tier 12 sacred relic talismans:
1 for agility
1 for craftsman (not need this one)
1 for diligence.

He will make bricks almost instantly.

Actually my craftsman doesn't have craftsman talisman because eventually your crafter will get a permanent +100% to quality buff.

If you don't have a bunch of tier 12 sacred relic talismans you probably still in early game, and the issues of poor clothing shouldn't affect you - just kill a guy who is freezing and get another one.

Just in case it was missed in @elonashooter's answer - this was the issue here. The job for making cloth from cotton is crafting.

I generally find it possible, if unwieldy, to reliably micromanage the workers to do what is needed, when needed. If the right job is the only one enabled, the right workshop is the only one they can choose from, and the current activity is cleared with the hand button - then it seems they'll always queue it properly.
The only two things that'd prevent them from doing so is bad mood or having to take care of physiological needs.
Sleeping can be worked around by interrupting once they're asleep, which gives some 30s(60?) of a window to start on the task. Eating and drinking doesn't take too long. Slacking off is probably the worst, unless one happens to have some mood improving items.
Items that absolutely need to be moved can always be equipped, discarded, and banned manually. E.g. when one needs heating items to be dropped next to an unconscious person to prevent freezing to death, or those same items moved away from flammables, ASAP.

^No its tailor. it says so on the loom and I've used people with only tailor for it too.

Making cloth is indeed tailor. Outers will also go fetch their own cotton to process. The problem is he let his sect get into a tantrum spiral a la DF.
