It's an utterly pointless mechanic that has no earthly reason for being in the game, doesn't make the game more fun or interesting, just shouldn't be there.
Switch "interactions prompts" from "mash" to "hold" : this way you'll minimize damage with minimal effort, by just holding down the mouse sx
They have active defensive moves though, like in the original.

No, lore has nothing to do with this. Don't read too much into it.
it's just a game mechanic for game mechanic's sake.
The "escape items" you used in RE2R were in RE1HD as well. Jill and Chris had daggers, tasers and grenades, but had a separate infinite inventory. You could literally carry 10 daggers and 10 grenades/batteries in that game.
For RE2R, Capcom decided to take the concept of "escape item" and implement it as part of the inventory management aspect. They dropped it in RE3 because this game is more about action and less about sheer survival horror.

Feeding zombies with granade did a guaranteed escape. And this mechanic make flash grenades more valuable item. Because of the lack of opportunity to escape - Leakers become much stronger.
However, every Resident Evil since 1996 has this same mechanic... once grabbed, you gotta button mash in order to be released quicker, otherwise you keep getting bitten. Nothing new here other than the prompt on the screen, which was meant to better explain what to do but it seems it ended up being more confusing as I see a lot of people thinking they are doing something wrong because they still get bitten.
