You can still start a new game, save, then edit the save settings (load game->gear on save) to change the difficulty however you want.
The devs are aware of the issue but exactly how it'll be addressed is still being worked on.
That's why there is a custom difficulty, you can activate the tutorial with high difficulty
but as you said yourself, people don't know how to read what they have
unfortunately yes, but from what I understand you can advance this by changing the game files
That kinda sucks. I hate having to edit files, but it isn't the worst thing in the world. I'll think on it for now. Thanks for the help and info!
I don't know if the same options as the locked custom difficulty are provided since I haven't beat the game, but when loading saves there is a cog icon in the top right corner that allows you to change the difficulty to whatever you want including Hard, Nightmare, and Peaceful. As well as tune a dozen or so options with sliders. No out-of-game file editing necessary.
