Because people try to get a bit of variation in their games? Check out Overwatch, there are plenty of lobbies which feature different kind of modes which aren't related to the original game - e.g. costume contests, role-playing.
There are multiplayer games out there far better suited to hide & seek style play, and some that revolve entirely around that gimmick, but in the sake of fairness, none are as accessible as Among Us is.
It's not the most obnoxious AU meta, because an attempt at creativity was made. What I really hate are those lobbies where player vision is set to x5 and imp vision gets x0.25. Why even bother playing at that point?

All the time people complain about the hosts settings and ask to change it, guess what you can do instead? Leave and find another lobby, or create your own lobby and wait for people to join. Cmon dude.
