They are, resetting them is optional. There are other sources of ethanol but outposts are definitely the best source and harder outposts give more ethanol for taking.
I'd say the replay value in re-doing the entire story is.. zero! Unless you really liked it.
You have an open world with resettable outposts and you grinded your butt off for the weapons you have.. Join a mate for a Co-Op, or even join a mate hosting his story for Co-Op if you want to do the story again.
I hated FC5 .. still I have more than 300 hours into it.
I only went through the story twice, and that were once too many.
All the fun were in the Outposts and the open world (and the Co-Op).. all the annoyances were in the story and it's progression.
Stop whining about stuff that isn't a problem. You can keep the outposts. Resetting them is completely optional.
