Most folks probably use headphones or headsets.
this might turn into a problem for the PC gaming industry where the devs will stop including surround sound since most of the users use headsets nowadays.
As you said, LiS and afaik LiS 2 had 5.1 sound.
Most people doesn't have a 5.1 sound system, yet all Netflix productions have 5.1 sound.
But for games 5.1 Sound comes normally "for free" with the Game Engine. So if an object is emitting sound anywhere, the position is exactly known, so having 5.1 or 7.1 is no extra work. So yean, having Stereo really makes no sense. :)
Stereo can be so dull once you get used to surround sound.
