About side quests

I noticed the gmae hints me whenever I have a new side quest. But I can't find any menu referring to them, am I missing something ?
Also, do side quests stack or replace each other as "active" whenever you discover a new one ?

Go into your menu and then go to the quests section. Then you hit R1 I believe (or whatever the equivalent of that is for your key bindings) and you'll see the list of side quests. You can sort them by all or by geographical territory (flatlands, sunlands, etc.)

Thanks ! I didn't see a quest section, I'll try to figure this out !

I found "side stories" by going to Journal and pressing RB on my xbox controller.

Yup, might be "Journal" I haven't played this in a while lol. It's at the very top when you go into your menu.
