I contacted Ubisoft Support regarding this issue 4 years ago. They advised me to try playing through Sequence 9, Memory 2/3, since a few players reported that they were able to reobtain their bow after completing that mission. Sadly, this did not work for me.
Ubisoft Support was also able to confirm that no further patches would be coming to Assassin's Creed III Remastered. Therefore, this bug, which IIRC has been present from the original release, is never going to be fixed.
I recommend speedrunning through the story until you are able to play through Sequence 9, and if that doesn't give you back your bow, nothing will.
I ended up having to start a new save file 19 hours into my first playthrough, replaying everything from the beginning, because I wanted to obtain 100% Sync and all achievements. I couldn't do so without the bow.
I hated having to speed through the story for nothing, and I hated having to restart the entire game. I sincerely hope that you will have better luck than me, because this bug completely ruined the game for me.
If you get your bow back, by making a new save file or through any other means, do not under any circumstances try to parry an attack with your bow in hand! To this very day, that remains my best guess as to how I lost my bow.
If you find a fix for this issue, please share it! But more importantly, if you can remember how you lost your bow in the first place, post that information here as well. It could save other players lots of trouble.

Speaking of bugs:
Since you're having issues with the base game, I'll assume you haven't touched The Tyranny of King Washington DLC yet.
Word of advice - from my experience, when you first start up the DLC, the game will have made an empty save file for you. DO NOT use this save file! Make a new one, and play with your own file!
Several players online, including a close friend of mine, found that all the progress they made during their first session on the pre-made save file got DELETED the next time they booted up the game.
I was fortunate enough to avoid this bug at least. Make sure you avoid it too!

Given how buggy this game is, I strongly recommend that you Google where the local save files for Assassin's Creed III Remastered are stored on your PC. Once you find the location, back up the contents of that folder after every single session, so that you can reload them if the game throws any more BS your way.
I'm sorry that this happened to you. Best of luck. I hope you will still get some enjoyment out of this game. Make sure this bug doesn't discourage you from playing the other games in the franchise though!
