How do I attack those skull spirits?

The ones that the undead spew out. Can I even attack them, or do I just dodge them?

Just doge them, but you sould kill those undead before they throw those spirits. Fill them with bullets until they explode. The knife is a good weapon for those undead... stab stab stab, step back, stab stab stab.
